Spiced Pear Butter

* This recipe for brine mixture only covers about 4 quarts at a time, so you need to start with a ½ gallon of cider vinegar and make sure you have plenty of cinnamon, allspice and ground cloves as you will need to make several batches of the brine to cover this many beets for a total of about 15 quarts or use fewer brine/spice mixtures for smaller quantities of beets.
