Wrap each water chestnut in bacon (1/3 to ½ slice bacon each.) Secure each with a toothpick. Place them on a foil lined baking sheet and bake \@350° for 30 minutes. Remove from the oven and carefully pour off the grease.

Mix together the mayonnaise, ketchup and brown sugar and drizzle over the bacon wrapped water chestnuts (DO NOT MIX THIS DRIZZLE AHEAD, ONLY WHEN READY TO USE AS THE TEXTURE WILL CHANGE.) Bake another 30 minutes with the drizzle on.
