Preheat oven to 350°.

Add oil to a large skillet and heat over medium/high heat.

Add chicken breasts and cook, turning once until fully cooked (165° internal temp.) and golden brown on both sides.

Remove from pan and cool.

Cut chicken into small pieces and set aside.

Cook egg noodles according to package directions, drain and set aside.

In a large bowl, mix together soups and sour cream.

Season with salt and pepper.

Add egg noodles and chicken to sauce mixture.

Gently stir together.

Place into slightly greased 2 qt. baking dish.

Melt butter in small pan.

Remove from heat.

Stir in crumbled crackers and toss, making sure all crumbs are moistened.

Top casserole with cheese and crackers.

Bake in preheated 350° oven for 30 minutes.
