Combine flour, ½ tsp. salt and ½ tsp. pepper. Place mixture on a plate or in a wide shallow dish. Set aside, next to flour mixture.

Fill skillet to ½" with oil and preheat to 350° (by candy thermometer.)

Gently place one steak in hot oil, frying up to 2½ minutes on the first side or until crust is golden. Turn steak over and cook until golden on the other side. Keep oil temp. between 325° and 350° at all times. Drain cooked steaks on paper towels.
