Preheat oven to 350º. Line a baking sheet with aluminum foil. Place cashews into a large bowl and set aside. In a microwave safe bowl, melt the butter with the honey and maple syrup for about 20-30 seconds. Remove from the microwave and stir in the cinnamon, vanilla and salt.

Preheat oven to 375°. Lightly grease a baking dish with cooking spray.

Mix all ingredients well in a large bowl and then spread the mixture in the dish.

Bake the dip for 20 minutes or until it is bubbly and lightly golden-brown on top.

Serve with crostini (cut a baguette into ½ inch slices and brush both sides with olive oil, and put in an oven set to 400° for 5 to 10 minutes or until golden brown, fresh veggies, crackers or pita chips.
