Mix pineapple, butter, brown sugar and cinnamon together. Spoon into 10 large greased muffin cups. Place a biscuit in each cup over pineapple mixture. Bake 10-12 minutes at 425°.

Let cool 5 minutes, then invert to remove from pan.

Preheat oven to 350°. Lightly grease a 13x9x2 inch baking dish.

In a large bowl, whisk eggs until combined. Stir in cottage cheese, shredded cheeses, chilies, pimentos, and butter.

In a small bowl, combine flour and remaining ingredients; add to egg mixture, stirring well. Pour mixture into prepared baking dish and bake for 35 minutes. Cut into squares to serve.
