Wash the mushrooms and pat dry with paper towels. Remove stems and set aside to be used later, minced and added to the sausage mixture.

Preheat oven to 350°.

Cook and crumble the sausage in a large skillet until done.

Drain and place in mixing bowl.

Add the cream cheese, jack cheese, crushed red pepper flakes and minced mushroom stems (optional.) Mix well.

Fill mushroom caps with sausage mixture and place on a rimmed baking pan.

Sprinkle with parmesan and bake for 20 minutes.

Remove from pan and let cool for 20 minutes.

These are best if cooked right before serving.
