At the end of the cooking time, perform a quick release to release pressure in the cooker. Add potatoes, carrots, onion and celery to pot. Re-secure lid and set to cook for 5 more minutes. Allow cooker to naturally release its pressure for 10 minutes before performing a quick release for any remaining pressure in cooker.

VARIATION
Cook as directed above without the vegetables. After adding dressing and gravy mixes, top with a jar of pepperoncini peppers. When roast is done, spoon meat on top of toasted French bread slices. Top with and melt slices of Provolone cheese. This is similar to Candy Field's Mississippi Roast in Crock Pot recipes.
