Preheat oven to 400°.
Spray a baking sheet lightly with olive oil. Set aside.
In a medium saucepan set to medium/high heat, combine the sugar, tequila and lime juice. Stir to combine. Bring the mixture to a boil and then reduce to a simmer for 8-10 minutes.
Place the tortillas on the baking sheet, making sure they don’t overlap (this recipe will make 2 baking sheets worth).
Spray the tortillas very lightly with the olive oil spray.
Brush each tortilla liberally with the tequila mixture.
Sprinkle each chip lightly with sea salt flakes or sea salt. (A little goes a long way!)
Bake for 5-8 minutes, turning the pan in the oven half way through. Monitor closely to make sure the chips don’t burn, as ovens vary. The chips are done when they begin to brown on the sides and are crisp.
