Cut through egg whites all the way around to create a cracked open egg look.
Blend mustard, mayo and egg yolks until thick and creamy. Use less than normal amount of mayonnaise so that the mixture is thick and egg tops won't squish the filling out. Scoop mixture into sandwich baggie for egg filling.
Slice carrot into ¼" circles, then cut into pie shape pieces for the chicks beeks.
Slice off just a bit of the bottom of each egg to make it level so it will stand up without rolling over.
Fill each bottom half of egg whites with filling from the sandwich bag.
Place top half of egg white back on top at an angle so that the yellow peeks out of the egg.
Use a drop of black food coloring for each eye and the carrot piece for the chicks noses.
