In a large pot, pour in the peanut oil and heat on medium to a temperature of 375°.

Add a few pieces of fish at a time to the bag of fish fry mix.

Shake until coated and drop into hot oil.

Repeat being careful not to crowd the fish pieces in the pan or letting the cooking temperature drop.

You will probably have to fry the pieces in several stages to cook all of the fish depending on the size of your skillet.

After 1 or 2 minutes, when golden brown, remove pieces from oil and drain on paper towels or newspaper.

Cover with a towel and keep warm while frying remainder of fish.
