Preheat oven to 400°. Spray or line a baking sheet.

In a small bowl, toss the cauliflower with a drizzle of oil, ¼ tsp. salt, 1 pinch of cayenne, ¼ tsp. paprika, ¼ tsp. onion powder, and ¼ tsp. garlic powder. Spread on baking sheet and cook for 15 minutes. When done, remove and allow to cool a bit. Turn oven to 450°.

In a medium bowl, mix the cream cheese, sour cream, mayo, parmesan, ½ C white cheddar, parsley, lemon juice, salt and a pinch of cayenne.

Add in the spinach, cauliflower, and garlic. Scoop mixture into a sprayed pie dish. Top with ¾ C white cheddar. Bake at 450° for 15 minutes or until cheese on top has slightly browned.

Remove; sprinkle parsley on top, allow to cool a bit and enjoy as a dip for chips, breads or other snacks.
