Cook pasta in a large pot of boiling salted water until al dente. Drain and rinse under cold water to cool; set aside.

Add the cooked pasta, eggs, celery, onions, pickle relish and bacon if using (or salt) to the bowl with the dressing. Gently fold everything together until the pasta and eggs are well coated with the dressing. Pour into a bowl and garnish with parsley and paprika.

In a large pot, cook pasta al dente according to package directions. Rinse under cold water to stop pasta cooking. Drain well. In a small bowl, combine sour cream, mayonnaise, relish, pickle juice, Dijon mustard, vinegar, sugar, salt & pepper. Mix well and set aside.
