Preheat oven to 350°.

Lightly butter a deep 2½ qt. casserole.

Boil a large pot of salted water on high heat.

Add oil, then macaroni.

Boil about 7 minutes until just tender.

Do not overcook.

Drain well and return macaroni to pot.

In small saucepan, melt stick of butter and stir into macaroni.

In large bowl, mix shredded cheeses.

To macaroni add the Half and Half, 1½ C shredded cheese, Velveeta and the eggs.

Season with salt and pepper.

Transfer to buttered casserole.

Sprinkle with the remaining ½ C cheddar cheese and dot with remaining tablespoon of butter.

Bake till bubbly around the edges, about 35 minutes.

This makes a lot.
