Sautee mushrooms and onions over medium heat with butter, olive oil, garlic and a little salt and pepper until onions and mushrooms are caramelized, about 25-30 minutes.

Slice roast beef into thin strips and add them to caramelized onion/mushroom mixture. Cook for 5-10 more minutes. Fill each cheese lined pepper half with meat mixture and top with another slice of Provolone. Bake 15-20 minutes in preheated oven at 400° until cheese is golden brown.
