Cook onion, pepper and sausage.
Add garlic, chili powder, mushrooms and tomatoes.
Simmer for 15 minutes.
Drain well in colander and then on paper towels (very important to soak out most of the liquid.) Divide bread loaf in half.
Roll out to an oblong shape.
Place ½ of mixture and ½ of cheese down middle of dough.
Seal well.
Repeat using other half of bread making a 2^nd^ loaf.
Cook seam side down on a cookie sheet at 350 degrees for 25 minutes.
Best if all items are prepared (chopped and measured out) before starting to cook
Warm the butter and olive oil in a heavy skillet. Add the tortilla pieces and sauté until softened. Add the chopped onion and sauté until it is transparent. Stir in the chopped green chilies.
Pour the egg mixture into the skillet and scramble until eggs are done. Remove the skillet from heat and sprinkle the chopped tomato, avocado, cilantro and cheese into the eggs and stir well. Serve at once with warm flour tortillas. Garnish with additional salsa and sour cream.
12 slices chopped, cooked bacon 1 ½ T chili powder
Spray (or grease) baking dish with cooking spray. Spread out a thick layer of tortilla chips across the bottom of your dish, ok to overlap. Press them lightly to break up in the dish. Set aside. In a mixing bowl, whisk eggs together and add in chopped bacon, jalapeño, chili powder, green onions and pepper jack cheese. Stir this mixture together and pour it down over the chips
Put casserole in the oven and bake about 45 minutes or until the egg mixture is set and everything is bubbly.
