Grease a 6 qt. slow cooker with cooking spray. Place onions (a bit separated) in bottom of cooker.

Rub roast with spice mixture and place on top of the onions. (Sear roast as described in Pork Carnitas recipe below.) Pour chicken broth in cooker.

Cover and cook on high for 6-7 hours or on low for 9-10 hours until meat pulls apart.

Remove from slow cooker and shred meat, removing any visible fat.

In a slow cooker, mix tomato sauce, ketchup, vinegar, sugar and garlic powder. Season both types of pork with salt and pepper and add to the pot. Top with the onion and lightly stir.

Cover and cook on high 3-4 hours until pork is cooked through.

Transfer pork to a large bowl; shred with forks.

Return shredded meat to the cooker and mix well.
