Thanks for asking for the beets recipe.
I'm sending you a page from my favorite recipes collection.
I I got the first recipe from Malcolm's grandmother back in 1992 when he lived with us and was just crazy about his grannie's beets.
When I do these beets, it is a big production that involves buying a big bag, maybe 25 lbs. or more.
I can usually only find these in farmer's markets or by knowing someone who knows someone selling them in that quantity.
I think my last cook yielded about 15 quarts and when I was finished, the whole kitchen looked like the Texas chainsaw massacre had happened there.
I pretty much set aside a day for canning and cleaning.
It's not impossible, but just kind of a big deal.
I'm telling you this to tell you that I think you might rather try the second recipe that's a much easier recipe and Ken might be just as satisfied with it and it would save you lots of time and trouble.
