Cook manicotti as directed, [omitting salt]. Combine soup and sour cream; mix well. In large skillet, sauté onions and mushrooms in butter until tender. Add chicken and ½ of soup mixture; mix well. Stuff manicotti shells with chicken mixture and place in well greased baking dish.

Combine water and bouillon stirring until dissolved. Add to reserved ½ soup mixture, mixing well. Spoon over manicotti. Bake uncovered at 350 degrees for 15 minutes. Sprinkle with cheddar and bake 5 more minutes. Ok to add frozen, chopped spinach that has been thawed and drained.

Freeze prepared manicotti if desired. Thaw all day and bake covered @ 250-300 degrees for 1-2 hours, then uncovered for 15 minutes at 350 degrees.
