Preheat oven to 350°. Grease a 9X13" baking dish.
Brown and crumble the sausage in a skillet. Drain the fat and set aside.
Spread the hashbrowns in the dish as the base layer.
Layer the sausage over the hashbrowns, then pour the egg mixture evenly over the top. Sprinkle the shredded cheese over the top.
Place in preheated oven and bake for 40-45 minutes until golden brown and bubbly. Remove from oven and let it rest for 5 minutes before slicing.
*Make ahead assembling the casserole the night before. Cover with foil and refrigerate. In the morning, bake as directed adding 5-10 minutes if baking straight from the fridge.
*For extra crispy hashbrowns, bake them in the dish for 10 minutes before adding other layers.
